Fire safety
- Never braai indoors or in a closed garage — burning coals give off carbon monoxide.
- Keep the braai on a stable, level surface away from walls, thatch, trees and washing lines.
- Keep a bucket of water or sand close by, and never use petrol or paraffin to revive a fire.
- Keep children and pets at least a metre away from the fire.
- Put coals out properly with water or sand before leaving them — they stay hot for hours.
Food safety
- Keep raw meat cold until it's time to cook, especially in summer.
- Use separate tongs and plates for raw and cooked meat.
- Don't reuse marinade from raw meat as a sauce unless you boil it first.
- Cook chicken to 75 °C and mince/wors to 71 °C.
- Refrigerate leftovers within 2 hours.
